Grilled Peaches - I love this...

Bring 1/4 cup balsamic vinegar to a boil in a saucepan; reduce heat and simmer until reduced in half. Remove from heat and stir in 2 tablespoons honey.

Coat grill rack with cooking spray and heat. Lightly coat peach halves with spray. Place peaches, cut-side facing down, on the grill and cook until well marked, about 3 minutes. Turn and cook until fairly tender, about 3 minutes longer. Brush the tops with the vinegar mixture and grill another 1 minute. Makes 4 servings. I serve it with frozen yogurt. I've even done this in a saute pan when I'm really craving it and don't feel like lighting up the grill. You can also use other fruits like plums or pineapple.

I've never tried the grilled peaches but have read recipes. May have to try that soon b/c I have a little peach lover!

Southern Living had a recipe a year or two ago for grilled pound cake which I thought was interesting. Still haven't made it.

Grilled peaches are yummy, and I've never had a grilled banana split before but I've seen it on Safeway's grilling website. There's a recipe there for grilled Apricots with almond topping- that sounds good too! Smiler here's the link if anyone wants to see any of the Grilled Fruit Recipes
