My kids enjoy these potatoes and I like to serve them with chili, which my kids sometimes like and sometimes don't. But at least I know they'll eat the potatoes.

4 medium white potatoes, baked (12 - 15 minutes in the microwave depending upon watts)
1/2 cup shredded Cheddar cheese
1/3 cup milk
1 egg
2 T butter
1/2 t salt
1/4 t pepper
Paprika

Cut potatoes in half (longwise) and shell or hull out, careful not to tear the potato skin halves. Put cooked potato in mixing bowl and combine with all other ingredients except Paprika. Beet at medium spped with electric mixer until smooth. Spoon potato mixture back into potato shells, sprinkle with Paprika and microwave high for 5 - 6 minutes or until potatoes are heated through.

OK -- isn't it amazing how popular twice-baked potatoes are?
My mom sent two baggies full of them home w/ us the last time we visited and I kid you not -- DH ate them all in two days! I had no idea they were such a delicacy. He wanted more and looked at me funny when I mentioned getting *1* for dinner to split w/ DD. Roll Eyes
