OK -- I am super horrible about packing lunches lately to take on campus w/ me so I end up eating a bag of pretzels from the vending machine for lunch or grabbing something from the Shands/Communicore food courts.
I can't think of anything good (and easy) to bring w/ me for lunch and it always seems like everybody else has better lunch ideas than you, doesn't it? It does to me, at least. I did notice an awful lot of PB&Js this week from other students so I suppose I'm not alone. I keep meaning to make a sandwich spread w/ chopped black olives, nuts and a little freshly squeezed garlic to go on bread for a sandwich. Well I won't be too much help here! I'm a PB&honey girl myself.
I do, on occasion, make a basic lunchmeat sandwich, but use a soft tortilla instead of slices of bread. A friend had a pack of pepperoni, a can of squeeze cheese and a pack of crackers the other day. I love salads for lunch, and Elizabeth good way to use up those olives...LOL..I make what i call what ever is left from dinner salads,put the dressing on the side, so that it won't be mushy by lunch time.If nothing good left over,I always have canned corn,chick peas,artichokes,olives,tuna, anything goes,avocado... yum....and i like Matza with it, its crunchy and not as many carbs as bread, and i also think a good olive oil and balsamic vinegar make a big difference. That's a good idea w/r/t the salads. I even saw a salad container (on a friend's bridal registry, lol) that has a separate place for dressing storage for lunches on the go.
PB & honey. lol. I just never was a big PB eater. I did like PB & pickles for awhile. My mom loved PB & bananas (ugh!) as a kid. I remember somebody doing a story at some point in my life -- lol, I forget where -- on all the PB concoctions. Some were downright nasty I thought (but I don't have much room to judge. My pregnancy craving -- after 14 years of strict vegetarianism -- was a hot dog w/ pickles and tomatoes! Thanks for the ideas! (And I bought lunch meat and tortillas at Publix today. It just gets so hectic in the mornings and I need to pack lunches the night before but somehow those always become hectic, too.) Elizabeth Mommy to Jodi (4/17/06) |

This is more of a dinner thing, but since we're on the topic of tortillas...
we have started using tortillas, instead of buns, when we do hamburgers. It is soooo yummy and a lot more healthy than all that fluffy bread. We did it last night and E even ate them. We cooked the burgers on the George Foreman. We then put a slice of cheese (you can get as fancy (spicy) or not (plastic cheese) as you want) on a tortilla, laid the burger on top, and folded it over. Put it back in "George" for a minute or so to melt the cheese and vuala! You can open it back up and top it w/ whatever you want. I did normal hamburger toppings last night, plus corn kernels. Sounds wierd, but it adds a sweetness and crunchiness to the sandwich. And sneaks in veggies for the kids to eat. Erin OcalaMom.com Moderator Mom to Cooper and Elizabeth |
