These sound good!
And I have to admit -- fresh mozzarella, tomatoes and fresh basil w/ a little oil and vinegar -- that could be my entire meal. I first tasted fresh mozzarella when I was in Spain -- they had the above on freshly baked bread and it was yummy! Then I got back to the states and couldn't find the fresh mozzarella anywhere except a local gourmet market -- it's cool that it is in all the grocery stores now!
Now if my tomato plants would just start growing some babies....

One of my families favorite healthy summer treats is frozen grapes. Clean, spread in single layer on cookie sheet, freeze, and take off and put in ziplock bag in freezer. So fast, easy, cold and yummy (and healthy).

You know, somebody else told me about frozen grapes last year and I thought it sounded great and always forget. I need to try to remember to do that!

I am a watermelon lover, though, and Jodi is, too. We could eat watermelon all summer and that's all and be fine w/ it. Smiler

Ooooh. I wonder if you could partially freeze a slice of watermelon. That would be nice and cool in the summer.

Here is a fresh and lite recipe, Cut up fresh plum tomato's,red onion,garlic,basil, add salt and pepper to taste,olive oil, balsamic vinergar. Toss together, let sit in the fridge for about 15 min. You can then serve it on toasted french bread(Bruchetta) or toss with any kind of pasta! Fresh and easy.. Enjoy

Thanks Lorraine & Elizabeth, I too am Italian, born in Palermo,Sicily.. Elizabeth, one way for me to get my kids to eat more veggies, I make all kinds of sauces, let see Razzer one dish is Tomato sauce with Chicken chunks and Broccoli. Make your tomato sauce, olive oil, garlic,chopped onion, sautee, till soft, cut up boneless chicken breast into chuncks, add them to the pot, cook them until light brown,add your tomato,I buy whole tomatoes, and crush them in a bowl with my hands,best tools in the kitchen! Then add S&P to taste, some fresh basil,half tsp. of sugar. Let simmer on low for about 30 min, meanwhile boil your pasta water,with salt, 5 min before you put your pasta in put your broccoli florets in the pasta water,let them cook for 5 min then add your pasta, drain toss with sauce and lots of parmigiano cheese....Enjoy

Pick 2 of your favorite flavors of sugar free fat free pudding mix. Mix them up per directions. Layer them into reuseable popsicle trays. And, you have a sugar free - fat free pudding pop. (Just remember they have carbs in them.)
