OK -- so I know we all get in mealtime ruts.
Perhaps if we share menus, that will help inspire others? (Including -- what do your kids like?! I think mine will live off of just -- and only a particular package of flavors -- of Yo Baby, some fruit and some whole grain crackers or bread.)

For instance, we often eat something like:
quiche
bean lasagna
grilled polenta (DH hates this though)
A chicken pot pie recipe -- different than normal CPP -- I dislike the traditional kinds
Steak
Grilled chicken w/ goat cheese on top
Spaghetti
etc....

What are you cooking at your house?

I love to make casseroles.

Some of my favorites are:
Green bean
hashbrown
squash/or zuchinni (which we have lots of fresh out of our garden right now!)

Other favorites are
vinegar chicken
ranch and garlic chicken

I use my Gooseberry Patch cookbooks a lot. In fact, they are the only cook books I use. Great, easy, good 'ole home cooking. I'll add a recipe from there next! Big Grin

I used to make a lot of casseroles, too, but DH complains about casseroles. Roll Eyes Roll Eyes Roll Eyes
(I have never met a pickier eater in my life.)

How do you make ranch and garlic chicken?

MMMMM...one of our favorites!

1 cup ranch
2 T garlic, chopped
1 T fresh basil, minced
4-6 boneless/skinless chicken breasts

combine all ingredients in a large ziploc bag
add chicken and coat
squeeze out excess air/seal bag
refridgerate up to 24 hrs until ready to GRILL
Grill chicken 15-20 min. until juices run clear
4 to 6 servings

Here's another Yummy and Easy one.

BBQ Ribs
1 onion, sliced
3-4 lbs. pork or beef ribs
18 oz. bottle of BBQ sauce(your choice of flavor)

Spray inside of slow cooker w/ non-stick
add onion slices
top w/ ribs
pour sauce over all

Heat on low setting for 8 hrs. or high setting for 5 hrs. Serves 6-8

Grilled polenta..YUMMO, Elizabeth do you add grated cheese to you polenta? here is a good idea and easy,cut up a bunch of veggies, zucchini, squash,red onions,green and red peppers,eggplant,put in a big bowl, toss with olive oil,S&P, spread on a cookie sheet, in the oven at 400 for 30 min, grill your polenta toss all your veggies with balsamic vinegar,minced garlic, fresh basil and parsley, put all your goodies on top, buon appetit! Hope DH likes it...LOL

Oooh -- the garlic/ranch chicken sounds good and something I think His Pickiness will eat. Smiler

The polenta and veggies -- he won't even touch plain polenta now, let alone veggies. Frowner But *I* think it sounds yummy and may make that one night soon for me and Jodi!! Thanks!
I even have a green bell pepper that my mom grew to use for this! Maybe that's dinner tomorrow lol!

We do add cheese to the polenta. I sometimes even add marinara sauce to it -- Jodi will eat anything w/ sauce. I think grilled is just perfect though.
